Simple Stir-Fry
Whenever I am pressed for time and have fresh veggies on hand, a simple stir-fry is my meal of choice. It’s so easy to throw together, just some chopped veggies, and small pieces of meat (for the carnivore husband), a little EVOO, and a dinner is born! This week, we had some yellow squash and zucchini on hand as well as some mushrooms.
I like to slice my squash for this dish, though there have been times when I have cut them into little pie shapes instead. This time around I added some Mrs. Dash Garlic and Herb seasoning to the mix. It’s a nice way to add some flavor without adding salt. Once everything was nicely cooked, I even sprinkled some grated Parmesan cheese on top. Yummm!
Of course, what would dinner be without having a fun little centerpiece to go along with it? When we were at Costco I saw these adorable little pumpkins that looked like they were growing off of a tree branch! Yes, they are real! And the tag called them “pumpkin tree”, which I had to Google when I got home because really, is there such a thing as a pumpkin tree? Guess what? There is! It’s called pumpkin on a stick.

My go to meal is usually pancakes. Is that weird?! OH! And stuffed shells.
