The weather has turned cold, and of course that is the perfect time to make something HOT! This recipe for Taco Soup is super easy, has a nice spice that isn’t overly hot but is still spicy enough, and of course, it’s filling too! We end up using the left overs for lunch the next day (the recipe makes 10 servings, so prepare for left overs). The can size on all canned items is 15 oz.
Taco Soup
- 1 lb of ground turkey
- Diced onion (usually about 2 cups)
- 2 cans of pinto beans
- 1 can of kidney beans
- 1 can of corn kernels
- 1 can of stewed tomatoes
- 2 cans of tomatoes with green chilies
- 1 package of taco seasoning powder
- 1 package of ranch dressing mix powder
This works well if you have a large, deep, skillet. My skillet isn’t quiet deep enough, so I use a pot. Brown the turkey and onion together then drain out the grease. Drain the beans and rinse them, and drain the corn, but add all the juice from the tomato cans. Then add in all the other ingredients and heat until boiling. Reduce the heat and simmer for about 20 mins.

I usually serve it with tortilla chips and some sour cream and shredded cheddar on top.
After getting a few inches of snow before Halloween, our fall turned absolutely beautiful.

The trees have finally started to change (fallen leaves are a great, free, mulch). The temperatures have been in the 60s, which makes me miss my hammock even more than before. It would be perfect hammock weather. Ours broke early this spring, and I have been saving up to replace it with this Fatboy Hammock from DesignPublic. My previous hammock only held one person, so I would love to get one that held both of us!!
Today however, fall is turning winter like with rain, and even more snow tonight. That means it’s time to snuggle up, and break out the hot chocolate too! I’m really not ready to let go of warm weather. Not ready at all.
With Christmas right around the corner, and having just finished the fun that is Halloween, the holiday season is here! I was thinking about how I want more Thanksgiving decorations, because right now I really just have a set of cute fall pumpkins, and a fun little set of turkeys. And that’s all. Thanksgiving really doesn’t get a fair deal when it comes to holiday decor. In fact, if you go to a store, you might even think that Christmas is this month instead of next.
But since everyone is forcing me to think about Christmas, here is a room that I just love. It’s from the Pottery Barn catalog.

There are so many things that I love about this room. First, the log cabin quilt is super cozy and fun. The beams on the ceiling, the hardwood floors, and the color on the walls. I love it all. However, what really caught my attention and got me thinking is how this room, the BEDROOM, is included in the holiday decorating fun! Look at the glass ornaments hanging from the greenery on the bed frame!
Do you decorate your bedroom for holidays? Honestly I haven’t done so since moving out of my parents’ home (I used to set up a small tree in my bedroom). Of course since getting married, I have decorated all the main living spaces, but never really thought to add something to our bedroom! But why not? It’s a space we spend a lot of time in too!

Lately I have been trying to work on new hoop tricks, and have been finding that I am truly stuck. I know that a lot of hoopers say that they get some tricks easily, while others take a really long time. This appears to be true for me too. Luckily, it’s still a whole heck of a lot of fun to try!

We actually have two of these hoops in our house, and while I usually use my smaller, heavier hoop, I find that the travel hoop is great for trying to learn tricks because it is lighter. It’s also pretty in the sun because the silver reflects the light! It’s a great starter kit if you have been curious about getting started. The DVD is great too.
So, remember that whole “I’m going to learn all these tricks this year” announcement? Turns out that while I am learning a lot of tricks, there is still so much to learn!!
