“Spaghetti” with veggies.
Behold what has to be the biggest spaghetti squash I have ever seen!
This tasty monster didn’t come from our garden, but I think that next year we will plant some to go along with our giant pumpkins!
I got it so I could make a “spaghetti” with some Italian style veggies. I had already made the chicken, and was getting ready to open this bad boy up when my husband came home. Good thing he came when he did too because it took both of us to get it open!
He says it was harder to open than a coconut, and by the looks of it, and the effort we both put into getting it open, I say he is right!
So, onto the “spaghetti! After finally cutting it in half, cooking it was easy. Just lay the squash cut side down in a glass baking dish (13×9), add 3/4 cup water (I used more because of the size of this squash) and then cover the baking dish with plastic wrap. Pop it in the microwave for 10-15 mins (again, I did mine longer because of size, about 20 mins), then when it is all done flip it over and use a fork to get out the “spaghetti”!
I was amazed at how easy it was to get out the squash with the fork. And boy did this big squash give us a ton of spaghetti too! Thank goodness we only used one half (planning to use the other half again soon though).
While the squash was cooking I sauteed some sliced red onion, zucchini, and diced tomatoes in a little EVOO. They were nice and ready to go on top of spaghetti! The finished product was very yummy, especially when topped with Parmesan cheese. In fact, once the cheese was on top, it really did taste a lot like traditional spaghetti! Crazy!
Sorry for the low light photos, we were hungry and I used my cell phone! Have you ever noticed that when you are trying a new recipe it always take so much longer?
We will try it again, maybe with some more veggies and a spaghetti sauce on top. I’m sure there are lots of ways to use this squash.
Have you cooked with it before? What kinds of things have you made with spaghetti squash?
Welcome back frozen yogurt!
When I was young one of my favorite things was getting frozen yogurt! There was a yogurt shop in the mall that was always a favorite, and there were other yogurt shops around town. In fact, my very first dog loved to go get frozen yogurt too (you should have seen those little eyes as he licked that yogurt with all his body and soul)!
Then for a time frozen yogurt shops seemed to disappear, which was always kind of sad because I still really loved it. In fact, I love frozen yogurt much more than ice cream, it’s so much lighter.
Well, happily frozen yogurt seems to be back and better than ever! Lately we have been enjoying a place called Menchies. While I am far from in love with the name, I do really enjoy their yogurt. My favorite of choice? Waffle cone, with cake batter yogurt and rainbow sprinkles.
So happy that frozen yogurt has made a comeback! Do you like frozen yogurt?
Things I rarely blog about.
Sometimes I feel like my body is my very best friend. Other times we are more like “frienemies”. Recently it has been the latter. You see, I have some chronic health issues. Nothing life threatening, but they are pesky and can really get in the way of life quality at times.
Ever since the no good, ugly, infection found my little kidneys (praise to antibiotics and getting better), I have been having flare ups from my chronic EBV. What this means for me is that I am more tired, and at times nauseated. Tired I can deal with, even though this is not your usual lack of sleep tired. Nausea? That is most horrible, I hate it.
Sometimes my peepers just won’t stay open. I am doing my best to take good care of myself to ward off a full blown flare up. Last time I was very sick lasted over 6 months, mainly spent sleeping 18 hours a day. My fingers are crossed that this is a small one, which, while unpleasant, has more good days than bad ones.
On the upside? Wonderful friends and family who are understanding. It can be hard at times to have what are referred to as “invisible illnesses” because a lot of people just don’t realize that you are sick. How many times I have heard the phrase “but you don’t look sick”! Which is a compliment I suppose, but at the same time almost makes it seem like they think you could be making it all up. How lucky I am to have the people in my life that I do, that they understand that I might not be able to always do everything I want, and they love me all the same.
Do any of you have chronic health issues? How do you deal with flare ups? Recently I have been dealing with it by playing a lot of Portal 2 with my hubby. Not a bad way to chill if you ask me.
