August is half way over, Halloween is around the corner!

Halloween is coming, and yes, I am already thinking about it. It doesn’t help that I have been seeing some amazing ideas on Pintrest, here is just a small portion of my “This is Halloween” pin board there.

One reason why I am already thinking about Halloween (besides just loving it) is because I am working on our costumes. Last year I started early, but my costume was a FAIL and I had to try to throw something together at the last second. It worked out just fine, my husband and I were Mario and Luigi. However, we were supposed to be Mario and Princess Peach. This year I will find a way to make a Princess Peach costume!

I realize that not everyone loves Halloween. Personally I think all of the holidays are fun to decorate and prepare for. What is your favorite holiday?

Running Late

The garden has been running late this year. By now our pumpkins are usually formed and getting bigger. This year? Just barely starting to get blossoms. All of the plants have been off this year, everything a bit smaller, flowering later, and we sadly lost some plants during the very wet and cold winter/spring.

Luckily some of our plants are still doing well, like the coneflowers in the photo above. It’s been lovely to find that they have spread to other areas of the garden, filling in with their gorgeous colors all by themselves!

It’s hard to believe really, but the season will be changing soon, cooling off. I hope to plant some lettuce and other cooler weather crops. It would be lovely to get something to harvest this season.

One thing we really need to do is get a load of dirt, and of course begin composting. I would love to get a compost crock for the kitchen, it would sure come in handy! We also need to find an ideal place to set up the NatureMill, as it can be a bit loud when it’s in the kitchen. But with all these wonderful fresh fruits and veggies (and their subsequent leftover bits) we could be making some amazing compost! *Update: the NatureMill is up and running and will be ready to receive our scraps in 3 days from now. Super happy dance!*

I am already planning for next spring, which is important because there are many things that I can plant in the fall for the coming season.

How is your garden growing this year?

Summer Eating

Summer seems to be a perfect time to eat healthy foods. Do you find yourself eating lighter in the summer without even thinking about it? I sure do! My husband and I have been making more of an effort to eat healthy foods, with a focus on lean meats and veggies. Sadly I am not a fan of meat, but my husband sure is!

Me putting on a happy face while cooking chicken.

It’s been fun to challenge my cooking skills as we try new and interesting recipes (though with the summer heat I have been trying to stick with meals that have as little cooking as possible). First up, a new to me combo of cottage cheese, cucumbers and tomatoes (mine was sans tomato).

Easy, cool, protien rich snack.

Lunches have been on the light side as well. Oh, and I took a big risk at the grocery store and picked up a salad dressing that claimed to have nothing in it. No calories, no gluten, no sugar, nothing! I was worried that something like that wouldn’t taste right, but the raspberry vinaigrette is very good, and my husband likes the regular vinaigrette as well.

Romaine greens and grilled chicken.

Also tried something else that was new to me (my friend Kerrie said it was awesome so I had to give it a try). Chocolate mint water from Metromint. Yes, you read that right. Have any of you had it?

Yes, chocolate mint water.

It’s a little strange, but very refreshing. I would actually like to try some of their other flavors. I’m kind of a real chocolate or no chocolate at all kind of girl.
